2 Cups of Beans
1/2 Green Pepper
1 Tbsp Crayfish
1 Red Pepper
1 Cup Ata Rodo
2 Cups Palm Oil
Fill a large bowl with hot water, pour the beans in the bowl and then remove any floating particles.
Wash the beans thoroughly.
Fill a large heavy pot with boiling water and then transfer the washed beans into the pot.
Add the onions and salt, let cook for about 45 minutes.
Add the green peppers, crayfish and salt. Let it cook for 1 hr, or until soft and mushy
AB Comment: You might need to add more water as you go along and if you notice the beans burning at the bottom of the pot transfer to another pot and continue boiling.
Place all the ingredients for the sauce in a blender, blend for about 30 seconds.
Transfer to a deep frying pan and allow to boil until all the water has boiled off completely.
Add palm oil and allow to fry for about 20 minutes or until the sauce is dark red (almost burnt).
Remember to stir continuously while frying.
