Start Your Weekend With a Whiskey Sour

The whiskey sour is a mixed drink containing whiskey, lemon juice, sugar, and an optional dash of egg white. With the inclusion of egg white, it is occasionally called a Boston Sour. For those who do not like or cannot have egg white, due to allergies or religious concerns, pineapple juice is used as a substitute.

NOSA: I remember finding out whiskey sours had egg white in them. I've never felt so conned in my entire life as a professional egg hater.

FOLLY: And then I found out that most bartenders in Lagos actually omit the egg white cause they can't hack it. This is actually a good thing cause imagine drinking your cocktail only to .... yeah eww. That said, cocktails are overpriced anyway at Lagos restaurants so it's high time we learnt to make ours.

INGREDIENTS I

  1. 2 parts bourbon
  2. 1 part lemon juice
  3. ½ part sugar syrup
  4. ½ part egg white
  5. Cubed ice
  6. 1 cherry and an orange slice, for garnish

METHOD I

  1. Put ice and all the ingredients into a shaker
  2. Shake hard and well for about 20 seconds to chill the liquid really well
  3. Strain the mix into a glass filled with ice
  4. Garnish with the cherry and orange slice

INGREDIENTS II

  1. 1.5 to 2 oz. (45 to 60mL) Whiskey
  2. 1 oz. (30 mL) Lemon Juice
  3. .5 oz. (15 mL) Simple Syrup
  4. .25 oz. (7 mL) Egg White (optional)
  5. Cherry for garnish
  6. Lemon or orange slice for garnish

Method II

  1. Dry shake (no ice) the egg white vigorously to get the white foamy element
  2. Put ice and all the ingredients into a shaker
  3. Shake hard and well for about 20 seconds to chill the liquid really well
  4. Strain the mix into a glass filled with ice
  5. Garnish with the cherry and orange slice

NB: Egg proteins do not break down without a fight, and this will froth them up nicely. Adding the ice and other ingredients at this phase may put too much water into the cocktail. You can adjust the ratio of simple syrup and lemon juice to taste. Using the egg white you can use as much or as little in the cocktail as you want.
